Explicația simplă: vitamina C este un antioxidant care reduce iodul, iar când avem amidon în soluție cu iod se formează un albastru intens; în prezența vitaminei C această reacție se reduce, schimbând culoarea, ceea ce ne ajută să „detectăm” vitamina C în suc.
